Before the idea struck to combine the heavy nutty flavour of Italian pistachio with delicate truffles found in the South-West region of France there was a little story of a very greedy hog. Since the 18th century ‘Black Diamonds’ known to most as truffle have been dug up from the ground as one of the most sought after and fine ingredients known to mankind, dating far back to even the time of the Ancient Egyptians. Today almost half of truffles are found in France in particular the Provence regions of Burgundy and Dordogne. Nobles and royals were once the only people privileged to indulge in the delights of ‘Black gold’ , on a cold winter morning imagine a farmer walking through hundred year old Oak trees in the woods of Provence’ with a couple of robust pigs to dig out these dark root mushroom beneath the heaviness of the earth. Unfortunately for the pigs they are no longer used for truffle hunting as they aren’t able to resist eating them before the farmers can forage them for produce. In Provence dogs are now used and trained to find truffle in the wild, unlike pigs they do not injure the terrain and can be trained to find the mushroom without eating them or digging them up. Once only for nobles the taste of truffle can now be enjoyed by everyone and why not enjoy a taste whilst sipping our Pistachio-Truffle tea, perfect for a cool afternoon in the courtyard under dappled sunlight.
